5 Crock Pot Recipes – Even After This Is Us!

I love the Crock Pot.I have used and abused 5 Crock Pots in my time as a mother and could not LIVE without one.  In fact, in my cabinet, I have 2, because one is usually in the dishwasher.

I am a mom that works outside the home, by the time I get off from work, go to pick up my littles at the babysitter and get home the clock is nearing 6 p.m. and I am tired. Enter my love for the Crock Pot.  I use it AT LEAST 3 times a weak, and even with the recent and amazing show This Is Us, I continue to use it (although I have checked to make sure there is no short in the switch).

I normally make a plan for the week and put that appliance to work.  It is a good day if I can leave for work, Crockpot cooking and plates and silverware on the counter, ready to dish out that deliciousness.  I love the smell as I enter the house and know that it won’t be long and my family will be eating and satisfied.

Crock Pot liners are a must, makes for such an easy cleanup.  GOOD crock pot recipes are a must too.  I’ve had quite a few horrible recipes in my Crock Pot.  My big boys still talk about the recipe for Applesauce Crock Pot chicken (it was gross).  I’ve also tried pasta recipes and I’m not a fan of the smooshy results.  

Below are some of my gang’s favorite Crock Pot meals, ENJOY!

Crock Pot Salsa Chicken

5 chicken breasts

1 can cream of chicken soup

1 can of corn, drained

I can of black beans, drained

I jar of salsa (your favorite)

1 packet of taco seasoning

In your Crock Pot, lay chicken breasts on bottom, sprinkle taco seasonings over chicken, dump salsa over the taco seasoning, dump can of cream of chicken soup over the salsa, dump can of corn and can of beans over the soup.  Put the lid on and walk away- I leave mine on low all day (8 hours).  Come home and shred up chicken.  Eat it like a stew, with cheese and chips, or serve it over rice or in a flour tortilla.  

Crock Pot Minestrone Soup

1 pound sausage

1 cup diced onions

1 clove garlic or garlic powder

1 cup sliced carrots

1 tsp basil

2 small zucchini, sliced

1 can chopped tomatoes

3 beef bouillon cubes plus 3 cups water

1 tsp salt

1/4 tsp pepper

1 can Northern beans(undranined)

Cook sausage and onion and garlic in a sauce pan, then put in crock pot.

In a Crock Pot, add all of the ingredients and put on low all day, a delicious soup will await you.

Salsa Verde Crock Pot Yumminess

5 chicken breasts

1 jar of Salsa Verde (green salsa)

Lay chicken in the Crock  Pot and top with the salsa, let it cook all day and serve it with tacos or nachos- Add favorite toppings, it will bring new life to your Taco Tuesday.

Meatloaf/Potatoes

Too good to be true?

Mix up your favorite meatloaf recipe, place meatloaf in Crock Pot, then add a layer of aluminum foil and place sweet or white potatoes on top and put the lid on, low for 5-6 hours and you have tender potatoes and a yummy meatloaf, for real

Crock Pot Potato Soup

Tator Tots (one frozen bag)

1 can cream of chicken soup

3 chicken bouillon cubes

5 cups of water

1 tsp salt

1 tsp pepper

Chopped onion, if you like onion

1 block cream cheese

Combine ingredients and let it cook all day on low, once you get home, add a block of cream cheese, stir until melted.  Add some shredded cheese and bacon pieces and yummmmmm.

  1. I had to laugh at the “GOOD Crock Pot recipes are must” line, as I am reminded of my sad, sad attempt at fish tacos in the slow cooker! I most definitely do NOT recommend!
